Kitakyushu City is surrounded by three seas, the Genkai Sea, the Hibikinada Suo Sea, and the Kanmon Strait, and has the richest variety of fish in Japan. A wide variety of fish, including fish that live in the deep sea, coastal waters, and migratory fish, are tiring. In addition, the Kanmon Strait has rapid tidal changes, and the direction of the flow changes depending on the ebb and flow of the tide, so the fish grown here are firm and of the highest quality. Kitakyushu is a “fish heaven” where you can catch an abundance of fresh fish.
Kitakyushu has the highest consumption of sashimi platters in Japan*. Surrounded by the sea, Kitakyushu has a blessed environment, making it easy to get fresh fish. Meanwhile, sushi made with these fresh fish is extremely popular both inside and outside the prefecture. You can enjoy a wide variety of delicious sushi, from high-end restaurants to ordinary restaurants.
Kitakyushu is close to fishing grounds and ports, making it easy to maintain freshness. However, this alone is not enough to maintain a high level of quality. It is important to perform delicate quality control tailored to the fish, such as using cold water and ice to avoid damaging the fish. In addition, fishermen, markets, wholesalers, retailers, and restaurants each have a high level of professionalism and skill to ensure the deliciousness of the fish. There are even wholesalers who calculate the amount of time it takes for the fish to reach the customer’s mouth and apply nerve tightening to the fish. The deliciousness of Kitakyushu’s sushi is supported by its geographical fortune and the professional techniques and culture that maximize it.

Participating companies are Teru Sushi and Heishiro Sushi. The venue was overflowing with over 500 participants, and the Kitakyushu sushi booth was a huge success. All of the sushi toppings were made using local fish from Kitakyushu, and the sushi was made with time taken into consideration to ensure it would be in the customer’s mouth.
